What about, instead of Gypsum................spray foam as used for insulation between rafters of some sort (the corn starch based product of course! :P). Be good to do some experiments with this material to assess the joint between timber and foam and interstitial condensation risk...

Rigid foams have well-known deficiencies - brittle/shinkage/cracking - but Icynene http://www.greenbuildingforum.co.uk/newforum/comments.php?DiscussionID=3341&page=2#Item_1 is something else - in-situ polyurethane foam but using water as blowing agent, soft-rubbery-flexible forever, vapour permeable.
